For this recipe you will need :
- 100 g of Chevrot Atelier de la Sèvre
- 125 ml milk
- 4 figs
- 4 tablespoons cane sugar
- 500 ml liquid cream
- 5 egg yolks
- 2 tablespoons cane sugar
Utensil :
- Ice cream maker
Preparation :
- Heat the cream and milk in a saucepan over low heat until boiling.
- In a bowl, add the egg yolks and cane sugar. Mix.
- Pour in a few tablespoons of the milk and cream mixture. Mix again.
- Add the mixture obtained in the saucepan, with the rest of the milk and cream.
- Cook over low heat until the mixture thickens.
- Then add the liquid honey and the goat’s cheese cut into small pieces, then beat with a whisk until the mixture is homogeneous.
- Then add the figs cut into small pieces and mix again.
- Strain the ice cream into an ice cream maker.
- Put the ice cream in the freezer.
